Quick Pizza

I think this was one of the first meals I made with my little boy (now taller than me!) and we have always enjoyed cooking together.

I’m a great believer in getting children cooking and eating the result as soon as they can. This Quick Pizza is a great start to cooking with your children. The dough is made by rubbing the margarine into the flour with your fingers, this is a great messy activity for you to enjoy with your kids. The dough is squashed down into the baking tray with hands too. If you don’t have a baking tray use the bottom of your grill pan lined with foil or any flat metal thing you use in the oven.

Pile up the pizza base with your favourite toppings and then cover with grated cheese to glue it all together!

Try making a face with the toppings, or your child’s initials, use your imagination and have fun. It’s a great one for parties – an activity and food all in one!

Ingredients for the base:
225g (8oz) Self Raising Flour
Salt and pepper
50g (2oz) butter or margarine
150ml (¼ pint) milk

Toppings:
Tomato paste
Pesto or herbs
Mushrooms
Pepper
Ham/chicken
Sweetcorn
Grated cheese
Anything else you like!

Equipment:
Large bowl (anything will do, even a clean washing up bowl) Weighing scales, a few spoons, measuring jug, grater and a baking tray (or anything flat and metal you can put in the oven). Optional sieve for sifting the four.

Method:

  1. Sift the flour and a pinch of salt into a bowl using the sieve if you have one but it won’t matter if you don’t.
  2. Rub the margarine into the flour with your fingertips until the mixture looks like breadcrumbs.
  3. Add the milk and stir with a metal knife until you have a ball of soft dough.
  4. Knead lightly on a floured surface.
  5. Press out with your fingers or the flat of your hand into a rough circle on a greased baking tray.
  6. Spread the tomato paste (you only need a little tomato paste as it’s a very strong flavour) and pesto/herbs over the base with the back of a spoon.
  7. Add other toppings to taste.
  8. Cover it all with grated cheese.
  9. Bake at 220ºC /Gas Mark 7 for about 20 mins.
